Layered Berry Ice Cream Cake
This is an Extra Christmas Pudding for our family. We start making it a couple of weeks before Christmas, or even earlier if we find good berries, and we keep layering until we run out of room in our Very Large Container. It works with every kind of berry except strawberries. You do need an icecream churn.
Recipe For Each Layer
500 g berries, pureed and sieved
4 eggs
3/4 cup of caster (superfine) sugar
1 cup whipped cream (Don’t use too dense a cream as it makes it a bit heavy)
Cream egg yolks with sugar
Fold in the berry puree
Fold in the cream
Whisk egg whites until stiff. Fold into mixture.
Pour into ice cream maker and churn.
Put into large, cake-shaped container. Cover with cling film and freeze.
Two days later do another layer. And another.
To serve, turn out and decorate with a few berries. If desired, puree additional berries, add sugar to taste and use as a sauce to pour over individual slices.
This cake comes in and out of my freezer for a week or so after Christmas – we’ve made it up to eight layers thick – and it feeds a small army.

Your book sounds sweet and I grew up in Southern California with many a warm Christmas (never a White Christmas) so, your Berry Ice Cream cake is a perfect Christmas dessert.
Yummo! Now that’s why I’ve resisted the temptation to buy an ice-cream churn – I’d be making ice-cream all the time (and I wouldn’t stay as slim as you Marion!).
We always have more raspberries than we know what to do with. This sounds like a wonderful way to use them. Of course it will be for a summer treat rather than for Christmas.
Experiencing a different way of life first hand gives you a better appreciation of it and the people. Sounds like a certain executive learns that lesson well in CHRISTMAS WITH HER BOSS.

Coming from a “pom” this looks like a “bonza” recipe. Love the combination of raspberries and cream. Heck anything with cream and raspberries at christmas is bound to taste good. Good luck with the book and have a very merry christmas xxxx

This ice cream sounds so good. I really love berries except for store bought strawberries which taste woody to me. I have my own little strawberry patch which I share with the robins. I love that I can buy berries all year round.
I just finished reading this book earlier this month. I always buy too many books especially Christmas stories so this was leftover from last Christmas. I loved William who was so used to having everything his own way that he really had to step out of his comfort zone. Just loved the train station in the middle of nowhere and the interesting cell phone reception.

Sounds delish, but sounds like a TON of work!
My ex-fiance’s mom had an ice cream ‘cake’ recipe but it was much easier (for those like me who are uber lazy!). Take your favorite vanilla ice cream, let it start to thaw enough that you can get a spoon easily through it, then get your favorite preserves and mix them together (amounts of ice cream and preserves depend on the size of the pan you use). In a flat cake pan (glass is best), use graham cracker crust (pretty much crushed graham crackers and melted butter) for the bottom, then pour your ice cream/preserves mixture on top. Freeze. When you are ready for dessert, get it out to do a bit of a thaw for around 5 minutes prior to serving. If you want to add fresh fruit on top, or whipped topping, do it just prior to serving!
I have always love ice cream cake. I have never been able to make one. Now that I have a recipe for it, I’m going to make one. Cross your fingers. I hope the cake will turn out right.
